Sparing Jimmy would have been a betrayal of that theme, and ultimately of the show itself, as Winter himself has pointed out. One of the core overarching themes of the show is that actions have consequences.
Season 2 was when this show proved it had the balls to be not just very good but great, and if it had chickened out of killing Jimmy to maintain the status quo it would be just a handsomely made gangster drama with a great cast rather than the ruthlessly honest gangster masterpiece that it has become.
